Our evergreen clematis came through most of the winter until the last cold snap. It now looks so sad, droopy with lots of dead leaves. How hard can I prune it? For future winter care should I wrap the main part of the plant, say up to six feet, would that help?

I would scrape a bit of bark on the stem and see if you can find some green. Prune down to that point.
